NutShed Peanut Butter Chocolate Chip Cookies

To make these cookies you need 1 bowl, 7 minutes to prep and 7 minutes to bake, you can’t argue with that! They’re crumbly like shortbread and best eaten warm with a mug of tea.

Makes around 15 small cookies

2/3 cup almond
1 tbsp coconut flour
½ cup coconut sugar
2 tbsp maca, optional but it gives a lovely light caramelly flavour
1.5 tsp baking powder
1tsp flaked sea salt
½ cup dark chocolate chip
280g (1 jar) NutShed peanut butter

In a bowl mix together the dry ingredients except for half the sea salt and the chocolate chips.
Add in the peanut butter and mix well, using a spoon or your hands.
Then add in the chocolate chips and mix well.
Dampen clean hands and taking a little lump of dough, roll a ball and place on a lined baking tray.
Gently press down with the back of a fork to flatten and sprinkle with the rest of the salt.
Bake at 170 for 7 mins until golden.
