This velvety soup has so few ingredients and is still rich and creamy, thanks to the peanut butter & warming enough to add fire to your bones from the inside out.
Make a big pot and you will be so chuffed with yourself over the next few days!

What you need;
1/2 head of a large cauliflower
1 onion
2 fat cloves of garlic
1 1/2 tsp curry powder
1 tsp turmeric 
1 small red chili (optional)
750ml – 1L stock
120g NutShed Peanut Butter (we used Original Smooth)

Sweat off the onion in some neutral oil, until soft and add the garlic and chilli. Finally add the curry powder and turmeric and cook for a minute or two.
Add in the cauliflower and toss to coat in the spices.
Pour in 750ml of the stock and simmer for 10-15 minutes, until the cauliflower is tender.
Add the peanut butter and blend blend blend.
Season with sea salt & black pepper.
Check the consistency and add the remaining stock if you think it needs it.

Enjoy with loads of fresh herbs & toasted seeds.
