Peanut Butter & J Banana Breakfast Bars

These bars are so good for grabbing on your way out the door or ideal if you’re a committed snacker like us, perfectly filling, satisfying and just a little bit sweet. These are definitely oat bars in opposed to banana bread, which is really banana cake if you think about it. They are loaded with nutritious ingredients and a pretty impressive at just under 10g of protein per bar. We haven’t added sweetener, you could, but I think the jam gives them the perfect amount of sweetness plus the bananas do their part too. Use your favourite jam, I used homemade blackberry & apple (thanks mom), but I think strawberry jam with chocolate pb would be pretty gorgeous too!
Makes 12 bars
What you need:
4 cups oats
3 eggs
3 ripe bananas (4 if they’re small)
260g yogurt (approx 1 cup)
2 tsp baking soda
2 tsp baking powder
Topping
Peanut Butter (we used Nutshed Very Crunchy)
Jam (use your favourite)
What you do:
Preheat the oven to 160c fan (or 170c non fan)
Add everything to a food processor or blender and give it a whizz.
Pop into a lined brownie tray (mine is 27cm x 17cm)
Dollop peanut butter and jam alternately and swirl with a spoon to create a marble effect. Place in the oven for about 35-40 minutes until golden and a knife comes out relatively clean.
Store in an airtight container, ideally in the fridge if you want them to last all week 🍌
