Peanut Butter, Gochujang & Crispy Tofu Noodles

When I say I devoured this bowl of noodles and have made them twice this week 🔥The creamy, spicy, sweet, salty, rich peanut butter noodles are delicious but topping with tofu that’s been crisped up in the air fryer (or the pan) brings this to a whole new level! The ingredient list looks long but it’s mostly pantry bits, which is the beauty of this quick, comforting meal.

What you need:
The sauce
1 tbsp Nutshed Peanut Butter
1 tbsp soy sauce
1 tbsp rice vinegar
1/2 tsp sesame oil
1 tsp gochujang
1 tsp maple syrup
1 scallion finely chopped, white & green parts separate
1 clove garlic grated or finely chopped
1 tsp grated ginger
1 portion noodles
For the tofu:
Half a block (100g ish) of firm tofu
1 tbsp soy sauce
1 tsp cornflour
Sunflower or olive oil

Crumble up your tofu, toss with the soy, cornflour and oil and pop into your air fryer for about 15 minutes or until nice and crispy, stirring a few times throughout (you can do this in a frying pan either).

Mix all your sauce ingredients together in a warm bowl.
Cook your noodles, reserving a couple of tablespoons of the starchy water and add to bowl with the sauce ingredients and stir it.
Add your noodles into the bowl, stir it up and top with tofu, green part of the scallions and optional sesame seeds. Tuck in!💣🔥🍜
