Peanut Butter Chocolate Mousse

Made with magic aquafaba these are rich, creamy, satisfying and basically the perfect dessert. This recipe makes 4 so you can share with your friends or have yourself a real party.
What you need for 4 mousse pots:
200g dark chocolate
Around 1/2 cup of aquafaba (the liquid from 1 can of chickpeas)
80g caster sugar
4 glasses or ramekins
Nutshed Original Smooth or Very Crunchy
What you do:
Optional serving: get some fancy glasses, dip the rim of the glass into some Original Smooth peanut butter and then dip into crushed peanuts. Pop the glasses in the freezer until you’re ready.
Chop up the chocolate and melt in a bowl over some simmering water.
Add the sugar and aquafaba to a mixer with a whisk attachment and whisk on high until the mixture reaches stiff peaks (You can also do this with an electric whisk but wouldn’t recommend whisking by hand).
Fold the melted chocolate into the whisked aquafaba until no streaks are left.
Grab your fancy glasses from the freezer & pop a teaspoon of peanut butter in the bottom (we’ve gone for Original Smooth but choose your favourite). Add in your mousse, smooth it out and top with chopped peanuts, shaved chocolate and some flaky sea salt to finish it all off.
Alternatively, grab a bowl or tupperware, fill half with the mousse, drizzle and dollop lots of peanut butter in and top with the rest of the mousse. Lastly, drizzle the top layer with Original Smooth peanut butter and swirl it around gently with a knife or chopstick.
Chill until you’re ready to tuck in ♥️
